If you’re a South African, you know all about potjiekos. It’s the name given to beef shin stew made in a tripod cast-iron pot on a fire or gas burner. It’s a slow cooked, rich stew made for a big crowd of hungry people. It’s also one dish that’s often entered into competitions due to the variations, cooking times and occasions. It’s a big meal for a hungry crowd of people and great in the place of a Sunday roast, especially with Mother’s Day coming up.
If you’re strapped for time, this recipe doesn’t take hours to prepare but you can easily cool the heat down a bit and let it simmer for as long as you want to. Browing the meat first creates the maillard reaction which caremalised the meat and deepens flavour. The rest of the potjie is all about layering. When using an open fire, make sure that the heat is consistent. If you’re cooking for a long time instead, the heat should be less and the water should be a low simmer.
