This recipe is one I first created for my dad and it’s been beloved ever since. I love the simplicity of it, the ease of it and how it can be on the table in about an hour. By using cooked chicken, cooked rice and thawed frozen broccoli, it really is simple enough for a busy weeknight. You can even prepare the chicken and rice earlier in the day, or the night before. I use condensed soups, but if you want to use a homemade version, that would work too.

Since this casserole takes care of the protein, carbs and veggies all in one bite, you might be stumped as to what to serve with it. When I make this I have a few things my family loves. A nice green salad, crusty bread, fresh fruit or garlic knots are just some of the sides I will use to make a complete meal.
1. Preheat oven to 375. Grease a 9×13 pan. In a large bowl combine all ingredients but the butter. Stir very well to combine.
2. Transfer mixture to a prepared dish. Cut butter into small cubes and add them to the top of the casserole.
3. Bake for 45 minutes. Stir well before serving.
